Organic compounds with an alpha-amino-carboxylic acid structure. These are the basic building blocks of peptides (i.e. two amino acids is a dipeptide, three is a tripeptide, etc.) and proteins. Essential amino acids are those which cannot be produced metabolically, but must come from the diet.
